I had pinned this recipe for Hearty Chicken Stew with Butternut Squash & Quinoa a while ago to my recipe board. The picture alone looks delicious but i also love butternut squash. With the temperatures dipping a bit and this squash coming into season, i thought i would give it a try. I admit that Quinoa tastes okay to me but it isn't something i seek out. I was really unsure about the kalamata olives in the dish so i thought i would twist the recipe a bit.
I followed her basic recipe but substitute a red onion for the yellow and use boneless, skinless chicken breasts. I omitted the Quinoa and olives. Instead i added some cooked wild rice (about 1/2 uncooked) that i had in my pantry and some black beans (15 oz). I also added a few spices: a 1/4 tsp of cinnamon and about an 1/8 tsp of cayenne pepper for that kick. I am so happy i did. The soup was so tasty and to my surprise the kids gobbled it up. I am sad i didn't make a bigger batch to have leftovers. I know i will be cooking this delicious stew again.
