We are heading into autumn here. i love baking. i bake all year round but there is something about warm ovens in the fall. What better way to kick of this season than some Spiced Chai Cookies. it's no secret i love Chai tea. There is something about the aromatic blend of those spices in a cup of black tea. I love a warm cup in my hands on a chilly morning. These cookies capture that essences in bite size morsels.
I adapted the recipe from A Spicy Perspective blog. You can view her original recipe here. I don't have instant Chai tea powder so i came up with my own concoction of Chai tea spices.
- 2 tsp Cinnamon
- 1 tsp cardamon
- 1 tsp ginger
- 1/2 tsp allspice
- 1/2 tsp cloves
- 1/4 tsp black pepper
Since instant tea powders tend to come with sugar in the mix, i changed the 1/2C of sugar to 3/4C. It was the right amount for these cookies were the perfect blend of spicy with just hints of sugar. I rolled my cookies in cinnamon sugar and left off the dusting of confectioner's sugar (powder sugar). Instead i filled the cookies with Cream Cheese frosting from the joy of baking.
